Carintas Nachos – Whole30

I. Love. Carnitas.

I also, love nachos. I am also currently doing Whole30. HOW in the WORLD can I have what I love? Easily, actually.

 

Here’s what you’ll need:

1 3lb all natural pork shoulder

3tbs Adoboe rub

1 diced habanero

2 limes – squeezed as much as they can be

1 Orange – squeezed

1/2 onion

2 garlic cloves

Carnitas:

Step 1: Rub your adoboe seasoning INTO the pork shoulder

Step 2: Place pork shoulder into the crock pot

Step 3: Dice habanero, onion and garlic cloves, throw into crock pot (I pushed mine into the pork shoulder to increase flavor throughout)

Step 4: Add in the lime juice/orange juice

Step 5: Cook on low for 8 hours or on high for 4-5

Nachos:

Plantain Chips topped with:

Carnitas

1/2 an Avocado

Green onions

Cholula

Romaine (or spinach)

 

This recipe is SO EASY and can easily be made into a “taco salad” if you are needing more greens.
